Recipe: New England Fish Chowder

Yield: 4 Servings
1 lb Cod fillet, skinned
1 c Savoury Biscuit crumbs
8 oz Onion, finely chopped
4 oz Butter
1 lb Peeled Potatoes
1 pt Milk
Salt and Pepper
2 tb Chopped, fresh parsley
Cut the cod into 1-inch pieces. fry half the biscuit crumbs and onion gently in 2 oz butter until the onion has softened.
cut the potatoes into half inch dice, put into a large saucepan with the milk and boil gently for 10 minutes until the potato is just cooked. Add the fish, onion mixture, the rest of the butter and season generously.
Bring back to the boil and simmer for five to six minutes more until the fish is cooked. To serve, spoon into bowls and serve with the remaining crumbs and chopped parsley sprinkled over the top.
