Recipe: New England Pumpkin Pie

Yield: 1 Servings

1 cn Pumpkin equal to 2 cups
1 1/2 tb Butter (melted)

1 tb Cornstarch
1 1/2 c Milk or 12oz evaporated

Milk
1/2 ts Cinnamon
1 c Sugar
1/2 ts Ginger
1/8 c Molasses
1/2 ts Nutmeg
2 Eggs (beaten)
1/2 ts Salt (scant)

Sift Sugar, Cornstarch, Salt, Cinnamon, Ginger and Nutmeg togeather. Mix this with pumpkin. Add Eggs, beaten, Melted Butter, Molasses and Milk. Add a dash of Lemon juice (if desired). Line a 9 inch pie pan. Pour in contents. Preheat oven and bake at 450 degrees for 15 minutes. Then reduce heat to 350 degrees and bake for anothe 50 minutes.
