Recipe: Yellow Squash Casserole

2 md Yellow Squash, Sliced
1 Stick Margarine (1/2 - 1 C
-- Veg Broth)
1 Roll Ritz Cracker(Low Fat)
1 md Chopped Onion
2 c Cheddar Cheese (Less Or Low
-- Fat)
Melt margarine, add onions & saute. Crush roll of crackers and add to cooked onion Immediately turn off burner, then stir; remove from heat. Layer 2 qt. deep casserole dish with squash, then cracker mix, then cheese; repeat ending with squash. Bake 350 F for 35 minutes uncovered, 10 - 15 additional minutes covered.
