Ingredients:
1 Frozen chopped spinach, 10
ounce
1/2 Cup(s) Very fine breadcrumbs
1 Egg, lightly beaten
1/4 Cup(s) Part-skim ricotta cheese
1/4 Cup(s) Grated cheese, Grated cheese
3 Green onions, chopped fine
1/4 Teaspoon(s) Ground cumin
2 Teaspoon(s) Freshly squeezed lemon juice
Directions:
Assemble all ingredients and utensils. Cook the spinach according to
the package directions. Drain and squeeze out the excess water. Stir
in the remaining ingredients and shape the mixture into 1-inch balls.
Arrange the balls on a nonstick baking sheet. Bake in a 400 degree
oven for 12 to 15 minutes or until lightly browned. Yields 15
appetizers or 5 servings of 3 appetizers each. Typos by Brenda Adams
