Ingredients:
1 Pitted prunes -, 12 oz
1 Vacuum-packed sweet potatoes
17 oz
1 Frozen sliced carrots -, 10
oz
1/4 Cup(s) Raisins
1/2 Teaspoon(s) Salt
1/4 Teaspoon(s) Freshly-ground black pepper
1 Frozen orange juice
concentrate - 6 oz
thawed
1 1/2 Teaspoon(s) Ground ginger
Directions:
Preheat oven to 325 degrees. Place prunes, sweet potatoes, carrots,
and raisins in a 2 1/2-quart baking dish. Sprinkle with salt and
pepper. In a bowl, mix orange juice, 3/4 cup water, and ginger. Pour
over prune mixture. Stir once or twice to combine. Bake uncovered in
preheated oven for 1 hour, stirring after 30 minutes. Add a little
more juice and cover loosely with foil if dish becomes too dry. Serve
