12 Bacon, cut in half
1 Pound(s) Beef liver, sliced
1/2 Teaspoon(s) Sage, ground
White pepper
In a large saute pan partially cook bacon until it is limp andbeginning
to brown; drain on paper towels. Cut liver into strips 1 inch wide and
about 2 inches long. Sprinklelightly with pepper, then with sage. Wrap
a partially cooked bacon striparound each liver strip. Thread on 8-inch
bamboo skewers, about 3 to askewer, to hold bacon in place. Preheat
broiler. Arrange skewers on rack in broiler pan. Broil, 3 to4 inches
from heat, until bacon is well browned on both sides, turningonce
(liver should be slightly pink in the center). Serve sprinkled
