Ingredients:
1 Cup(s) Chopped dates
1/2 Cup(s) Amaranth
1 Cup(s) Boiling water
2 Eggs
1/2 Cup(s) Honey
1/4 Cup(s) Butter, melted
2 Cup(s) Whole wheat flour
2 Teaspoon(s) Baking Powder
1 Cup(s) Chopped pecans
1 Teaspoon(s) Vanilla extract
Directions:
Soak dates and amaranth in boiling water. Beat eggs well, add honey
and butter; beat well. Stir in all remaining ingredients mixing well.
Pour into an oiled loaf pan. Bake at 350 F for 1 hour and 15 min.
