4 Fillets American grouper, 8
ounce
Salt and pepper to taste
1 Cup(s) Toasted corn meal
1 Tablespoon(s) Olive oil
Relish
Plum sauce
Dill for garnish
1/4 Cup(s) Blanched lemon zest
1/4 Cup(s) Julienne jalapenos
2 Cup(s) Julienne carrots
2 Cup(s) Julienne fennel bulbs
1/2 Cup(s) Rice wine vinegar
8 Plums, Juice of
1 Lemon, juice of
1 Tablespoon(s) Minced, fresh dill
Directions:
Season fillets of grouper with salt and pepper and coat with corn
meal. In a saute pan heat oil, and saute grouper for 3 minutes on each
side, or until done. Relish Combine all ingredients and season to
taste with salt and pepper. Plum and Lemon Juice with Dill: Combine
