2 Eggs
1 Egg yolk
3/4 Cup(s) Water
1 1/4 Cup(s) Milk
1 Teaspoon(s) Brandy
1 1/2 Tablespoon(s) Vegetable oil
1 Cup(s) Flour, unbleached
1 Teaspoon(s) Salt
1/4 Teaspoon(s) Seasoning salt
1 Teaspoon(s) Sugar
2 1/2 Tablespoon(s) Green onion, minced
1 1/4 Teaspoon(s) Taragon, dried
2 Tablespoon(s) Parsley, finely minced
3 Shallots, pressed
12 Ounce(s) Ricotta cheese
3/4 Cup(s) Parmesan, grated
1/2 Teaspoon(s) Tarragon
1 Tablespoon(s) Minced Parsley
Directions:
Whisk eggs lightly. Whisk in rest of liquid ingredients. Gradually
siftin dry ingredients, whisking after each addition. Stir herbs into
thebatter and let sit covered for an hour, or cover and refrigerate
untilready to make crepes.With a fork, beat up and blend filling
ingredients. Make the crepesbeing sure to stir each time as the onion
tends to sink to the bottom.With a rubber spatula, spread a thick coat
of the filling over eachcrepe.Brush the rolled up crepes with melted
butter, then roll in gratedparmesan cheese. Bake at 350 degrees for 8
minutes, then turn oven tobroil for a minute or two to lightly brown
