Ingredients:
2 Size round eggplants
1/2 Maui onion, minced fine
2 Cloves minced garlic
1 Tomato, peeled and
chopped
6 up to
8 Fresh basil leaves, minced
2 Tablespoon(s) Fresh parsley, minced
1 Tablespoon(s) Olive oil
2 Tablespoon(s) Shoyu
1 Lemon, juice of
1 Pinch(s) Tumeric
1 Pinch(s) Allspice
1/2 Teaspoon(s) Cumin
Directions:
Bake eggplant for 45-60 minutes at 400 degrees. Cool slightly,
peelskin and chop pulp. Mix together remaining ingredients. Add
eggplant andmix well. Mound on a dish and serve with your favorite
