Ingredients:
8 Flour tortillas -, 8" dia
1 Spam luncheon meat -, 12
oz cubed
1 Cup(s) Chopped onion
1 Cup(s) Chopped green bell pepper
1 Tomato, chopped
2 Cup(s) Shredded cheddar cheese
divided
4 Eggs
2 Cup(s) Whipping cream
1 Jar picante sauce -, 4 1/2
oz abt 1/2 cup
Directions:
In center of each tortilla, place about 1/4 of the spam, 1
tablespoonbell pepper, 1 tablespoon tomato and 1 tablespoon cheese.
Roll uptightly. Repeat procedure to make 8 enchiladas. Place
enchiladasseam-side down in greased 13- by 9-inch baking dish.In a
medium bowl, beat together eggs, cream and green peppers. Pour
overenchiladas. Cover. Refrigerate over night.Heat oven to 350
degrees.Bake enchiladas for 40 to 50 minutes or until eggs mixture is
set.Sprinkle with remaining cheese. Bake 5 minutes longer or until
cheese ismelted. Serve with picante sauce.This recipe yields 4
