Ingredients:
2 lemons
6 Cup(s) Apples, peeled and
chopped
6 Cup(s) Onions, chopped
3 Cup(s) Tomatoes, peeled and
diced
2 1/2 Cup(s) Sugar
2 Cup(s) Cider vinegar
1 1/2 Cup(s) Raisins
2/3 Cup(s) Fresh mint, lightly
packed
1/4 Cup(s) Fresh Parsley, chopped
1/2 Teaspoon(s) Salt
1/2 Teaspoon(s) Cinnamon
Pinch(s) Cayenne pepper
Directions:
Pare outer rind from lemons and cut in thin strips. Squeeze and strain
lemons into stainless pan. Stir in remaining ingredients; bring to
boil. Reduce heat to low; simmer for 1 1/2 hours or until thickened.
