2/3 Cup(s) Oil
1 Egg
1 Cup(s) Buttermilk
1 Teaspoon(s) Baking soda
1 Teaspoon(s) Salt
1 Teaspoon(s) Vanilla
2 1/2 Cup(s) Flour
1 1/2 Cup(s) Diced apples
1/2 Cup(s) Chopped pecans
1 Tablespoon(s) Butter, softened

Directions:

07:01:21 EDT Combine brown sugar, oil and egg. In another bowl combine
buttermilk, soda, salt and vanilla. Add this mixture to sugar mixture
and alternate with flour. Mix well after each addition. Fold in diced
apples and chopped pecans. Pour into muffin tins and sprinkle with 1/3
cup sugar combined with 1 tbsp butter. Bake at 325' for 30 minutes.
