1/2 Cup(s) Soy flour
1/2 Cup(s) Whole wheat flour
1/2 Cup(s) Unbleached all-purpose flour
2 Tablespoon(s) Wheat germ
2 Tablespoon(s) Powdered milk
2 Tablespoon(s) Unprocessed bran
1 Tablespoon(s) Baking Powder
1/2 Teaspoon(s) Baking soda
1/4 Teaspoon(s) Salt
Grated peel of 1 orange
part 2:
2 EGGS, SEPARATED
1/2 Cup(s) Plain yogurt
1/4 Cup(s) Oil
1 Tablespoon(s) MOLASSES
1 Tablespoon(s) Honey
1 1/2 Cup(s) Orange juice
Directions:
Combine the first 10 ingredients. Reserve the egg whites and add the
eggyolks and the remaining ingredients to the flour mixture in a
foodprocessor, blend well. Beat the egg whites until stiff; fold into
thepancake mixture. Cook on a 300 degree griddle, for 2-1/2 minutes on
oneside and 1 minute on the other. Makes about 36 3-inch cakes.
