Ingredients:
3 Eggs, slightly beaten
3 Cup(s) Milk
3 Cup(s) Crumbled day-old biscuits
1/2 Cup(s) Sugar
1/2 Cup(s) Raisins
1/4 Cup(s) Butter or margarine, melted
1/4 Teaspoon(s) Salt
1 Tablespoon(s) Grated lemon rind
1/4 Teaspoon(s) Ground nutmeg
1 Tablespoon(s) Cornstarch
2/3 Cup(s) Water
1/3 Cup(s) Rum
1/2 Teaspoon(s) Lemon Juice
1 Tablespoon(s) Butter or margarine
Directions:
PUDDING: Combine eggs and milk; stir well. Add crumbled biscuits
andnext five ingredients; stir gently. Spoon mixture into a greased
2-quartbaking dish, and sprinkle with nutmeg. Place dish in a larger
shallowpan; add water to depth of 1 inch. Bake at 350 degrees for 50
minutes oruntil knife inserted in center comes out clean. Serve warm
with RumSauce. Yields 6-8 servings.RUM SAUCE: Combine first 4
ingredients in a small saucepan; bring to aboil over medium heat. Cook
1 minute, stirring constantly. Add lemonjuice and butter; stir until
