Ingredients:
1 Cup(s) Cooked rice
2 Cup(s) Milk
2 EGGS, SEPARATED
1/2 Cup(s) Sugar
1/4 Teaspoon(s) Salt
1/2 Teaspoon(s) Vanilla
1/2 Teaspoon(s) Cinnamon
1/2 up to
1 Cup(s) Raisins, optional
Directions:
Add cooked rice to milk, salt, vanilla and cinnamon and heat to
scaldingpoint in double boiler. Beat egg yolks with sugar. Add rice and
milkmixture slowly. Mix well and pour back into double boiler. Cook
untilthick. Fold in raisins or chopped fruit, if desired. Put in
buttered1-quart casserole and cover with meringue made of egg whites
