brand gelatin orange
1 Cup(s) Boiling water
1/2 Cup(s) Cold water
Ice Cubes
1 3/4 Cup(s) 4 ounces Cool Whip whipped
topping thawed
1 11-oz mandarin orange
sections well drained
Mint leaves, optional
DISSOLVE gelatin in boiling water. Combine cold water and ice cubes
tomake 1 cup. Add to gelatin, stirring until ice is melted. If
necessary,place bowl in larger bowl of ice and water; let stand,
stirringoccasionally, until slightly thickened, about 5 minutes.FOLD
1-1/3 cups of the whipped topping into gelatin mixture. Pour 1/2 ofthe
gelatin mixture evenly into 6 (6-ounce) custard cups, filling eachcup
about halfway. Place dollop of remaining whipped topping in centerof
each dessert; press orange section into each dollop. Fill cups
withremaining gelatin mlxture. Chill until firm, about 3 hours.PLACE
remaining orange sections in food processor or blender; cover.Process
until smooth. Unmold gelatin cups onto individual dessertplates. Spoon
orange puree around desserts. (Or, omit orange puree.Garnish desserts
with whole orange sections and mint.) Garnish with mintleaves, if
desired.MAKES 4 servings. Prep time: 20 minutes, Chill time: 3
