Ingredients:
1/2 Pound(s) Fresh arugula leaves, washed
and dried
4 Roma tomatoes, sliced
1/2 Cup(s) Red onion, sliced
1/4 Cup(s) Fresh chopped parsley
2 Teaspoon(s) Red wine vinegar
1/4 Cup(s) Red onion
Salt & pepper
Directions:
Remove the stems from the arugula and place the leaves in a salad
bowl. Mix in the tomatoes, onion and parsley. Place the vinegar in a
separate bowl and slowly whisk in the oil. Season with salt and
pepper. Pour the dressing over the salad and toss to blend well.
