Ingredients:
2 Tablespoon(s) Butter
1 Cup(s) Long-grain rice
1/2 Cup(s) Onion, chopped
1/2 Cup(s) Celery, chopped
2 Cup(s) Chicken stock
1/2 Cup(s) Dried apricots, diced
1/2 Teaspoon(s) Ground ginger
Salt
1/2 Cup(s) Toasted almonds, sliced
Directions:
In large skillet, melt butter; cook rice, onion and celery over
mediumheat, stirring, for about 6 minutes or until rice is golden and
onion issoftened.Stir in stock, apricots and ginger; bring to boil.
Cover and reduce heatto medium-low; simmer for 15-20 minutes or until
rice is tender andliquid is absorbed.Season with salt to taste.
