Ingredients:
10 Onions, sweet variety
1 Cup(s) Seasoned breadcrumbs
1 Cup(s) Corn kernels
1 Cup(s) Zucchini, diced
1 Cup(s) Grated carrots
1 Cup(s) Beets, diced
1 Cup(s) Water
1/2 Cup(s) Honey
3 Tablespoon(s) Dijon mustard
2 Tablespoon(s) Balsamic vinegar
2 Teaspoon(s) Paprika, Which?*
1/2 Teaspoon(s) Ground ginger
1 1/2 Teaspoon(s) Salt
1 Teaspoon(s) Pepper
Directions:
Preheat oven to 350F. Peel onion, slice in halfon the equator.
Removecentres leaving a bowl in the onion halves. FILLING: In a bowl,
stirtogether 1/2 c breadcrumbs, corn, zucchini, carrots & beets.
Firmlypack into onion hollows. Arrange in a shallow baking dish & pour
wateraround the base. GLAZE: In a separate bowl, whisk together the
glazeingredients. Drizzle half the mixture over the top of the onions.
Bake30 minutes. Drizzle with remaining glaze & bake another 30
minutes.Just before serving, sprinkle onions with remaining breadcrumbs
& broiluntil the crumbs are toasted & golden brown. * The recipe
doesn't statewhich paprika, but I would opt for the sweeter Hungarian
