Ingredients:
3 Potatoes
2 Tablespoon(s) Parmesan cheese, freshly
grated
1/4 Cup(s) Monterey Jack cheese
shredded
2 Teaspoon(s) horseradish
1/4 Cup(s) Sour cream
2 Green onion, finely chopped
1/2 Teaspoon(s) Salt
1/8 Teaspoon(s) Pepper
Directions:
Place potatoes in medium saucepan and cover with water. Cook until
softbut not falling apart, about 20 minutes. Drain and chill. Preheat
ovento 425. Lightly butter sides and bottoms of 7 muffin cups. Peel
andcoarsely shred cold cooked potatoes. Gently press about 1/3 cup
potatoshreds against bottom and side of each muffin cup. Sprinkle
withcheeses. Bake about 30 minutes or until lightly browned.
Combinehorseradish, sour cream, green onions, salt and pepper in a
small bowl.Spoon mixture into center of hot potatoes.Recipe by:
