Ingredients:
2 Teaspoon(s) Olive Oil, Or Vegetable Oil
10 Ounce(s) Red potatoes, cut into
1/4-inch-thick slices
1/2 Cup(s) Chicken broth
1 Tablespoon(s) Lemon Juice
1 Teaspoon(s) Grated lemon peel
1 Teaspoon(s) Fresh Parsley, chopped
1 Clove garlic, minced
1/8 Teaspoon(s) Pepper
Directions:
In 12-inch nonstick skillet heat oil; arrange potatoes in a singlelayer
in skillet and cook over medium-high heat until bottoms arebrowned, 3
to 4 minutes. Turn potatoes over and cook until other sidesare browned,
3 to 4 minutes.2 Add remaining ingredients to skillet and stir to
combine. Reduce heatto low, cover, and let cook until potatoes are
tender, about 5 minutes.Serve warm or chilled.Note: This dish is good
