Ingredients:
1 Cup(s) Couscous
1/2 Cup(s) Raisins
1 Cup(s) Canned chick-Peas, drained
4 Ounce(s) Sliced ham, julienned
1/4 Cup(s) Fresh Parsley, chopped
3 Green onions, chopped
1 Tomato, diced
1 Sweet red pepper, diced
1 Zucchini, diced
or 1 cup
1/2 Cup(s) Olive oil - good quality
3 Tablespoon(s) Lemon Juice
1 Garlic clove, minced
3/4 Teaspoon(s) Salt
1/2 Teaspoon(s) Ground cumin
1/4 Teaspoon(s) Turmeric
1 Dash(s) Hot pepper sauce
Directions:
In saucepan, bring 1-1/4 cup water to boil; stir in couscous
andraisins. Cover and remove from heat; let stand for 5 minutes. Fluff
withfork.In large bowl, combine couscous mixture, chick-peas, ham,
parsley,onions, tomato, red pepper and zucchini.Whisk together oil,
lemon juice, garlic, slt, cumin, turmeric and hotpepper sauce; toss
