Ingredients:
1/4 Cup(s) Olive oil
2 Onions, sliced
2 Garlic cloves, minced
2 Zucchini, cut into 1/4"
slices
1 Yellow squash, cut into
1/4" slices
1 Teaspoon(s) Oregano
1 RO*TEL Diced Tomatoes and
Green Chilies 10 oz
1 Crushed tomatoes, 16 oz
Directions:
In a large skillet, saute onions and garlic in hot oil until tender.
Addzucchini, eggplant, squash and oregano. Saute util vegetables
aretender. Stir in RO*TEL and crushed tomatoes; simmer 10 minutes.From
