to 425 F. and coat a baking sheet with non-stick cookingspray. Wash and
core the peppers, removing the seeds. Stuff with cheeseof your choice.
Mix the egg replacer with the water, or place the soymilk in a small
bowl. Mix the salt and bread crumbs in a small bowl. Dipthe peppers in
egg/soy wash, then roll in bread crumbs to coat. Arrangethe peppers on
the baking sheet, and bake until the coating turns goldenbrown (about 5
- 8 minutes). Serve hot with a dipping sauce (fatfreeRanch is
