Ingredients:
9 Ounce(s) Plain flour
3 up to
5 EGGS, SEPARATED
1 Pinch(s) Salt
1 Tablespoon(s) heaping sugar
3/4 Pint(s) Milk plus
5 Tablespoon(s) Milk
2 1/4 Ounce(s) Butter or margarine
Sugar for sprinkling
Applesauce for topping
Directions:
Sift flour into a bowl & make a well in the middle. Beat egg yolks
witha little of the milk, salt & tablespoon of sugar & pour into the
well.Starting from the middle, blend the yolk mixture & the flour.
Graduallyadd milk, taking care to avoid lumps. Whisk egg whites until
stiff;carefully fold into flour mixture. Heat butter in frying pan &
pour inabout 3/8 inch of the batter. Fry until underside is light
yellow. Tearinto small pieces with two forks. Brown the pieces well,
turningfrequently. Repeat until the batter is used up. Serve sprinkled
