Ingredients:
1 Cup(s) Sugar
1/2 Cup(s) Water
2 Egg whites
3 Green food coloring, more or
less optional
1/2 Teaspoon(s) Vanilla extract
1/2 Cup(s) Finely ground walnuts
Directions:
Combine sugar and water in a small saucepan and place over
moderateheat. (Do not use temperature-controlled burner.) Stir
mixtureconstantly until it begins to boil. Cook until candy
thermometerregisters 265 degrees. While syrup is cooking, grease cookie
sheets withunsalted shortening. Heat oven to 250 degrees. Beat egg
whites in asmall bowl until stiff but not dry. Add food coloring to
syrup, ifdesired. Pour sugar syrup into egg whites in a thin stream,
beatingconstantly with an electric mixer or rotary beater. Continue
beatinguntil mixture is stiff. Fold in vanilla and walnuts. Drop
mixture byteaspoonfuls about 1-1/2 inches apart on prepared cookie
sheets. Bake 15minutes, or until lightly browned. Remove cookies from
sheets and coolon wire cake racks. Makes about 3 dozen cookies.REDBOOK,
